The product covered by this EPD is the Pesto alla Genovese with and without garlic under the Polli 1872 brand, packaged in 190g jars and produced with fresh basil, sunflower oil, extra virgin olive oil and DOP cheeses.

The fresh basil used to produce Pesto alla Genovese Polli comes from a controlled supply: basil is worked within 24 hours from harvesting. Fresh basil is seasonally delivered by farms belonging to the controlled supply chain to the processing sites of Monsummano Terme (PT) and Lozzo Atestino (PD), where it is immediately transformed into Pesto alla Genovese or into a semi-finished product to be used out of season to produce the same finished product.
