Apolio s.r.l. produces extra-virgin olive oil since 2001. The pitted process is an innovation introduced in recent years in order to recover olive pit as fuel, and reduce the environmental impact of pomace. Furthermore the pitted process gives particular features to the taste of the extra-virgin olive oil produced.
The pitted extra-virgin olive oil is obtained only by cold mechanical treatment of olives. In particular, harvested olives are transformed after 24-48 hours by a pitted three-phases centrifugal process.
After the phases of cleaning olives, this extraction method foresee a) pitting of the olives and grinding of pitted olives; b) malaxing of the olives paste; c) horizontal centrifugation by three-phase decanter in order to separating pomace from olive oil and water d) vertical centrifugation in order to separating the remaining water quantity from the olive oil. The olive oil is packed in a 1 liter glass bottle, labeled and capsule by a PVC capsule. A cardboard box is used as secondary packaging in order to contain six glass bottles.
The processes which are included in this declaration are the olive production (agricultural phase), olives transportation from the olive grove to oil mill, the process of pitted extra-virgin olive oil (industrial phase), the packaging process of 1 liter glass bottle of olive oil, transportation to distribution, the “end of life” of the product and packaging disposal.
